Primorje cake is a traditional cake from
the region of Dubrovnik Primorje, made
from eggs, sugar, almonds, a bit of
flour, and lemon. It was decorated, with
whipped sugar and egg whites. It is
prepared for special occasions such as
weddings, baptisms, confirmations, and
various festivities. It’s always surprising
how the homemakers, with a relatively
limited selection of ingredients,
manage to create such a delicious and
airy cake. The quality of Primorje cake
is evident in the fact that it is still made
today and even appears on formal
menus, standing side by side with more
modern and sophisticated desserts.
